Celebrating Filipino Heritage, One Bite at a Time

In the province of Pangasinan, every harvest season brings with it the aroma of something truly special—Deremen. This humble rice delicacy, dark in color and rich in flavor, is more than just food. It’s a piece of cultural history—a sweet reminder of the bond between family, tradition, and the land that sustains them.

What Is Deremen?

Deremen is a traditional Pangasinan kakanin (rice delicacy) made from young glutinous rice grains that are toasted or burned in their husks, then pounded, husked, and cooked in coconut milk and brown sugar. The process gives it a distinct nutty aroma, deep brown color, and sticky, chewy texture that sets it apart from other Filipino rice cakes.

In some towns, Deremen is also called inlubi or nilubayan, but no matter what name it goes by, its rich taste and deep connection to Filipino heritage remain the same.

A Labor of Love

Making Deremen is a time-honored process that requires patience, skill, and teamwork.

  1. Harvesting: It begins with selecting the perfect glutinous rice, still fresh in its husk.
  2. Toasting: The rice stalks are burned or toasted over open fire until they turn blackened. This gives Deremen its smoky flavor and dark color.
  3. Pounding: The grains are then pounded using a traditional mortar and pestle to remove the husk.
  4. Cooking: The pounded rice is simmered in coconut milk and sugar, sometimes with pandan leaves for extra fragrance, until it thickens into a glossy, sticky mixture.
  5. Cooling: Finally, it’s spread over banana leaves, cooled, and served in slices or portions.

Each batch of Deremen is made with care, usually by families working together during the harvest season—a symbol of bayanihan (community spirit) and shared labor.

A Sweet Offering and a Symbol of Memory

In Pangasinan, Deremen carries deep cultural meaning. It is often prepared during Undas (All Saints’ and All Souls’ Day) as an offering to departed loved ones, placed on the altar before being shared among family members.

This tradition turns Deremen into something sacred—it’s not just a dessert, but a bridge between the living and those who came before us. Every bite carries a sense of remembrance, gratitude, and love.

The Taste of Heritage

Deremen is unlike any other kakanin. It’s not too sweet, with a subtle bitterness from the toasted rice that balances perfectly with the creaminess of coconut milk. Its chewy texture and earthy aroma make it a comforting treat, especially when shared with family or paired with a warm cup of coffee or salabat (ginger tea).

It’s a flavor that instantly brings you home—to quiet mornings, to your grandmother’s kitchen, to the heart of Filipino simplicity.
